We operate across all major Italian destinations: Rome, Lake Como, Tuscany, Amalfi Coast, Sardinia, Sicily, and Puglia. Market access, wine pairings, and dietary coordination are included.
The Chef Roster | Michelin Alumni and Regional Specialists
Our chef roster includes: former sous-chefs from Osteria Francescana (Bottura, 3 Michelin stars), Dal Pescatore (Santini family, 3 stars, 4 generations), Don Alfonso 1890 (Iaccarino, 2 stars, Sorrento), Il Luogo di Aimo e Nadia (Milan, 2 stars), and Enoteca Pinchiorri (Florence, 3 stars). The rostered chefs have departed from these establishments to work in the private mandate sector, they do not hold current Michelin positions but retain the technical level of their training.
We also maintain a regional specialists roster: a Sicilian mafaldine and arancini specialist (Catania), a Neapolitan pizza-al-tegamino master (ex-L'Antica Pizzeria da Michele, trained in the original Brandi 1889 tradition), a Venetian cichetti and risotto expert (ex-Osteria alle Testiere), and a Sardinian fregola e bottarga specialist (Cagliari). Regional specialists are deployed for mandates where authentic local cuisine is the priority over Michelin-level gastronomy.
Market Access | The Chef's Morning Ritual
Every private chef mandate begins with market access, not a supermarket, but the central market of the closest city: Campo de' Fiori (Rome, seasonal produce, regional cheese), Mercato del Capo (Palermo, 7:00am, street-food atmosphere, best fish counter in Sicily), Porta Portese fish market (Rome, Trastevere, dawn arrivals), Mercato Centrale (Florence, Sant'Ambrogio section, truffle dealers and artisan cheesemakers), Piazza delle Erbe (Verona, oldest continuously operating market in northern Italy).
The FFGR Rolls-Royce transfers the chef to the market at 07:00, the chef completes the procurement by 09:00, returns to the villa by 10:00, kitchen preparation begins for a 13:30 lunch or 20:30 dinner. Clients are invited to accompany the chef on market visits as part of the mandate. We handle the cash float and supplier accounts.
Wine Pairing Service | Enoteca Access and Cellar Curation
The private chef mandate optionally includes a sommelier (qualified AIS, Associazione Italiana Sommelier or CMS, Court of Master Sommeliers) for formal dinners of 6+ guests. The sommelier manages: wine selection for each course, cellar delivery coordination (we have accounts with Enoteca Buccone in Rome, Enoteca Pitti Gola in Florence, and Vineria Cracco in Milan for same-day delivery), and decanting/glassware management at the villa.
For clients requesting a complete wine cellar for their Italy stay, we pre-populate the villa cellar 3 days before arrival: an opening allocation of 60-120 bottles across styles (Brunello di Montalcino, Barolo, Amarone, Franciacorta, and regional whites) with the sommelier's tasting notes attached to each bottle.
Mandates Across Italy | Regional Specialisation
Rome mandates: chef deployed to your rented Trastevere palazzo or EUR villa, Roman cuisine programme (cacio e pepe, coda alla vaccinara, supplì, tiramisu original 1981 Roberto Linguanotto recipe), wine from Frascati DOC producers and Lazio natural wine movement (Marco Carpineti). Sardinia mandates: bottarga di muggine (grey mullet roe from Cabras, Oristano, the single best in Italy), pane carasau, malloreddus al ragù di cinghiale, Cannonau wine. Tuscany mandates: hand-rolled pici pasta, bistecca alla Fiorentina (Chianina beef, 5cm thickness minimum, sourced from Macelleria Cecchini in Panzano in Chianti, advance order required), Super Tuscan pairing.
Standard mandate structure: minimum 3 days, 2 meals per day (light lunch + formal dinner). Full-board option (breakfast, lunch, dinner, afternoon merenda) available for 7+ day mandates. Chef accommodation at the villa or at FFGR-arranged local accommodation. Coordination fee: included in the FFGR mandate. Chef daily rate: on request, scaled by profile (regional specialist to Michelin alumni), plus market procurement costs.
